Updated Barley Oat Pancakes (Top 8 Free)

I mentioned these pancakes in my previous post, so now it's time for the recipe! I remember taking a photo of the regular pancakes cooking (they turned out fluffier than the original post's photo) but I can't seem to find it, so the number-shaped pancake will have to do!

Barley Oat Pancakes (Wheat, Egg, Dairy, Soy, Corn free)

1/2 cup barley flour
1/2 cup oat flour
1-1/2 tsp safe baking powder
1/2 tsp kosher salt
2 Tbls maple syrup
1 Tbls canola oil
1/4 cup applesauce
3/4 cup rice milk
coconut oil to coat griddle & to "butter" pancakes

Preheat a pan or griddle on low-medium to medium heat. (On my electric stove I set it to 3 or 3-1/2.) Coat pan lightly with melted coconut oil.

Stir together dry ingredients. Add wet ingredients and mix until smooth. Set batter aside for a minute or two to thicken.

Pour batter onto hot griddle and cook until edges turn a light-medium golden color and bubbles start to form on the surface. Flip over with a spatula and top with coconut oil. Cook other side until golden brown.

Yields 18 3" silver dollar pancakes

I've been making these every couple days at the demand of this little man. :)

  1. Hi Sarah B:

THanks so much for posting the link to these yummy and healthy pancakes at Allergy-Friendly Friday! What a great bunch of recipes to kick off with. I can't wait to see more of your food (and your kid is a cutie!). My food allergy kid is 9, a little smaller than most 9 year olds, also has a huge vocabulary, and is STILL climbing everything in sight! Maybe it's part of the profile?

    Keep up the great work!

    Kindest regards,

  2. Your little one is adorable! I found you via Allergy Friendly Friday and love the cooking/crafting combination. My daughter is specifically allergic to oats in addition to the usual laundry list of allergens but I am glad these are corn free. Corn is so hard to avoid, it is in so much. Thanks for sharing!

  3. Cybele, thank you so much! Your books and site are such and inspiration!

ohmahdeehness - I think the pancakes would still turn out with a different flour instead of the oats. :)

  4. your recipes sound so yummy - though I am allergic to gluten so the oats and barley are out for me :( Its funny as a kid I had allergies to different foods, environmental and critter allergies. Then I outgrew them. Now at the ripe ole age of 53 they are back! Only now wheat, gluten, barley, eggs, dairy, soy, nuts - but its good not being sick all the time. I had allergy shots as a kid to desensitize me - I don't think they do that any more..I wish you luck with your little one. Be well, lori
